Sassy Apricot-Glazed Salmon
This is pretty awesome if I do say so! You can use the apricot sauce for stir fry too if you choose! This was my first day on the fertility diet in preparation for trying to conceive our second little one in a few months. I served it with wild rice :)
4 servings
1 pound atlantic salmon
1 cup apricot preserves
1 tbspn red pepper flakes
1 tbspn vinegar
1 tbspn soy sauce
1 red bell pepper chopped
1 tbspn olive oil
In saucepan, saute bell pepper in olive oil. Brush olive oil on a cookie sheet and place salmon skin side down on it. Broil for 5-7 minutes or until salmon is opaque and top is golden and slightly crisp. While fish is broiling add preserves, vinegar, soy sauce, and red pepper flakes to the sauteed bell pepper.
Cut and serve salmon with a generous bit of sauce and bell pepper.
